For this delicious cake recipe you will need,

these ingredients:

125g (4oz) unsalted butter, softened

185g (6oz) caster sugar

3 extra large eggs

125g (4oz) ground almonds

185g (6oz)plain flour

400ml (1 1/2 cup)mashed papaya (red pawpaw)

125g (5oz) brown sugar

butter for greasing cake pan

Directions:

Preheat oven to 200 celsius (400 F).

Place butter and sugar in mixer and stir until foamy. Add eggs one by one, then stir in ground almonds and flour to make light batter.

Grease a spring mould well with butter and sprinke with sugar.

Mix papaya with brown sugar and fill mould, spreading evenly.

Pour the cake batter over the papaya and shake pan to even out.

Place in preheated oven and bake for 35 minutes or until a cake testing pin or fork comes out clean.

Remove from oven and leave to stand for 10 minutes. Place a plate over the mould and turn cake upside down out onto the plate.

Serve warm or leave to cool and serve with whipped cream. You can also decorate it with chocolate cream.
